I've done a couple of these "courses". Basicly I went over basic aircraft controll, how to call for help, basic landings, and how to shut down the engine.
I had my students fly from the right seat, and taught several simple rules of thumb. For approach speed, I just use the middle of the white arc. The landings were useually really ugly, but rember that in a real scenerio nobody cares about the airplane. As long as it's survivorable, it's good enough.
