The side stick and FBW reminds me of flying the planes around in Grand Theft Auto. But not in a fun way, more of a “this is really numb and disconnected” way.

Meh, I haven't flown the 737/320 other than in the sim, but - smaller biz jets with mechanical controls > crj700 > e175 in terms of feels.
You get what you get and you don't get upset.

That said, I am enjoying the Boeing. I certainly feel that the -800 and -900 feel a lot closer together in feel/handling than the 320 and 321. The 321 always felt wobbly to me, especially with gear and full flaps during landing and derotation for the rollout. You can definitely tell when you're in a 320 vs 321. Whereas *for the most part* the -800 and -900 feel fairly close.
