Items such as proper capitalization, punctuation, spelling, not typing as if you are composing a text and avoiding slang are all generally good ideas. I certainly don't expect emails and cover letters to be robotic and devoid of human input/passion, but a little brevity and old fashioned professionalism never hurt.
