Single pilot high performance jet certainly isn’t unsafe or impossible; tactical jets do it all the time. In the clear, in the weather, whatever. It does take not only training and currency, but an increased level of ability, situational awareness, and thought process to keep ahead of what’s going on and the rate they are going on at. Single pilot IFR, no autopilot, round dials, doing a penetration HI approach in IMC and low Wx at 300+ knots before final was routine ops. Just had to have the ability to think faster than 6 miles/min and the SA to prepare for things further out than that. Not unsafe, but unforgiving to those who didn’t possess that.

I guess the difference is they don't just hand out fast jets based on paperwork, most folks washout for any number of reasons. Much like pro sports it's a true meritocracy, either you can or you can't, your race or genitals have no bearing on your ability. I don't know why some people find that offensive.
