You extend the gear while taxiing into the shallows until you have weight on the wheels.
Works better than an anchor, and you don't bang the keel against the lake bottom with every wave.

You may see them in the US soon enough as an American company just ordered 10 of them. I think they can still carry more gallons of water than this new Chinese design, but I'm sure the Chinese design has some advantages as far as performance.
