I believe that's covered by company training files/folders that should be signed after every lesson

yup.. the company just has to fill out the appropirate portion on the back of your 8710..

I talked with a FSDO today, and it can be logged only as SIM time and does not count toward total time.

I was startled when they actually answered the phone!

Really? I thought I could log it as TT towards working on the hours needed for the ATP, oh well.

You can use that simulator time to meet up to 100 hours of the total time requirement toward your ATP, but it still is not logged as total time. I did this, and got my ATP with 1425 hours total time, 75 hours of simulator time.
