Well, I've never actually used anything other than DME, but if for whatever reason I had to, I'd probably use the triangle method. Less math. The advantage of the wing tip bearing method however is you find your time/distance much sooner which would be helpful if you need to know right away.
 
If you are talking about the questions on the commercial knowledge test, I don't know of anyone who actually uses this. If I had to, I would probably just take cross radials from another VOR and measure the distance between them, then compute speed from that. Back in 1940 when there was no VOR's or DME, it might have been just the ticket. Now, it is pretty useless.
