great town (considering there are about 3 great towns in OK :) ) OU, OSU and Tulsa Tech all have aviation divisions I know about, but I do not know the size of each of their fleets.

If you ever want to get some nice grass runway experience, send me a PM and I can put you in touch with the guy in charge of Blue Mountain Academy's strip in Hamburg. It's private and they want you to get permission before coming in, but they'll let almost anybody in as long as you call ahead.
