I've worked at a place like that before. I was expected to come in at least 8 hours a day, even if I had zero students and the area was covered in severe thunderstorms. I left as quickly as I could.
I personally would much rather work as an independent contractor than an employee. I take an extra hit on my taxes, but it's more than worth it to work on my terms.
Then again, I'm not trying to fly professionally. For me instructing is just something I enjoy doing while I wait to start law school.
