I recently took on a student that has an airplane at a private airstrip that has no identifier nor is it on any charts. Others have used the identifier for another nearby (1 SM away) private airport that does have an identifier. Is this ok? or should I just put the coordinates, or the legal name of the place? 61.51 just states "Location the aircraft departed from..."

Does the place have a name? Just write it down. Doesn't even have to be in the "Route box" if there isn't room. The route box is the logbook publisher's way of meeting the "Location where the aircraft departed and arrived" logging requirement in a way that meet the needs of 90% of the pilots on 90% of their flights, not some sort of FAA gospel.

See any helicopter pilot's logbook from Iraq or Afghanistan. Heck, some of my entries are just to and from "Iraq."

I'm just going to say that my deployed logbooks are very different from my logbooks I keep recording them. Many months, the times are just added into mine by the month. Departure says AFG and Arrival says AFG. I have sheets with aircraft tail numbers and flight time, but for many of those months exact dates, launch and land times are omitted. Asked the FAA about it and they're fine with it. If anyone needs to know I have the sheets to verify, but my log is my word.
I somehow doubt that anyone would question the hours with everything else in except the airport you took off or landed from. If you need the time for cross country, make a note of the distance flown. Done deal.

That's how I log seaplane landings. Either the body of water it is in, or nearby real estate or the name of the island.
Same for the HEMS, Alaska & bush pilots. Not every landing and take off occurs at a named place. My HEMS friends log the road/ intersection/ mile marker, etc...

I was thinking you could put something like "PVT-A" then "PVT-B", etc., and attach a list in the logbook identifying the place by an address or coordinates. I like NickH's suggestion of the vicinity identifier too. I'm sure as long as you make a reasonable effort to identify it, you'll be fine.
