I could be wrong, but I think the handles in the center console have knobs on them allowing you to switch frequencies.

There isn't really much else that you need for getting out of heavy turbulence. Maybe a HDG and ALT selector that you can actually hold onto as well. Communicate UP/DOWN/LEFT/RIGHT is pretty much all the PM needs. The PF just has to use the sidestick to stay upright. I can't really think of another scenario where a touch screen would not be an improvement.

Maybe smoke in the cockpit?
