When? Where? WTF? I'm not quite sure what I just saw there. They continued back into the air after touching down off runway??

Not particularly. At :25 there’s a noticeable new sound that could be spool but listening to it again I have no idea.

I took that as the mains hitting and making awful noises.

Can an airbus guy comment was that some sort of flap retract noise and they were starting the go?

No idea. Nothing is activated during takeoff roll. Only thing hydraulic wise is a pump turning on during gear retraction.
Doesn’t sounds like any of that. The sound just before impact could be engine spooling up, as the holy Krishna moment is realized and the delay in turbine thrust availability.

Sounds like metal on metal or screeching. I can't place that noise very well.
 
To me, it looks (and sounds) like he was on approach, flew diagonally over the intended landing runway, touched down in the weeds off-runway, then started flying again with a compressor stall going on. I may be hallucinating, but to me it looks like the engine was physically displaced (bent relative to the normal mount angle) during the event. If that's what actually happened, I can sorta suss out why the engine stall might have happened.

I think the displacement is an obstacle illusion, and even still, a slight displacement shouldn’t cause compressor stall, else engines would be compressor stalling right and left at every moderate turbulence encounter.

I think (and hope) you are correct about the illusion (love your pun, but in this case, the obstacle was clearly not the illusion...;)).
Regarding displacement of the intake vector if the engine gets bent downward?? Not so much. That would tend to severely screw things up.
