Gear in your flight bag...

7x5" notepad from walley world. Very useful if you're flying around controlled airspace so you can write down clearances, etc.
 
I carry condoms, a disposable enema, some illegal fireworks and a foreign language book in case I get shot down.

Seriously though. You can leave most of the gee-whiz stuff at home. Something to write on, a bunch of things to write with (I always lose pens). Some way to navigate (sectional, once you're instrument rated always carry your plates). That's about it. Once you get into the cross country phase there's some other stuff that's good to carry. Stuff like a cell-phone, money and a big thing I always had was toilet paper. There was a guy at our school that didn't carry toilet paper. Lets just say a long cross country at 3 in the morning and a plate full of burritos. His new nickname was "One-Sock" if you catch my drift.
 
I suppose the TP thing can go into the 121 world too. I heard a story about a Beech 1900 driver that after some bad Mexican food...let's just say he ended up hosing himself off on the ramp and borrowing a spare pair of pants from is FO.
 
Knife, 4 screw drivers, 2 flashlights, 2 pliers, leather gloves, snacks, ipod, snacks for other crewmembers, headset, earplugs.

Snacks and entertainment items are by far the most important.
