Just curious, what can something along the lines of a 767 safely endure in terms of g-loading? Thanks

By design, the minimum standards, 2.5 is design load, 3.75 is ultimate load, and negative 1g. Some will exceed those by a wide margin, others (like the 777 in the video on youtube) will pretty much break on schedule.
I had to explain to an F16 guy once why rolling 90 degrees and loading 4gs wasn't an acceptable crosswind pattern turn in a Seminole.

The plane will take more than the passengers will.
That said I can't think of one of Military student I didn't enjoy training.

I enjoyed and learned a good bit from all but one of them..
Had a P-3 guy.. Even the examiner had a hard time believing this guy actually flew in the military.. Complete moron..
Couldn't work the radios..
Couldn't fly the plane..
Couldn't this.
Couldn't that..
I've heard that said a few times from various people. Absolutely stupid and deadly remark.
Each person that said that to me was immediately written off the list of someone who I would take any advice from.
I snagged a ride in a T38 and was SOMEWHAT aware of what was going on through about 6.5. I know that there is no way a Cessna's wings are going to stay on at anywhere NEAR that number.
Given that the low end Cessnas have a load factor limit of 4.4 in the utility category and an ultimate load factor of 50% greater than that, the aircraft should withstand about 6.6g's before the wing starts failing. (for 3 s anyway.)
And if you're lightly loaded, possibly more than that....the wings feel load, not load factor.
