How do you determine True course for a leg on a flight which is off from a straight line if there is no meridan using a plotter? Like I want to deviate from the straight line to cross over a prison(which is a good visual point) to use as a check point and then turn back to the course.?
 
Could you not just plot from the point you intend to depart the straight line course to the prison, then return.
 
Exactly, although what you are doing doesn't make much sense. More than likely you should be able to see the prison from a point along the straight line between the origin and destination. You should also be able to guess how far you are from it to know whether you are over your "checkpoint." If you want to just see the prison for sightseeing purposes then do exactly as Douglas said, but if it's being used as a checkpoint you shouldn't zigzag back and forth. I know you didn't ask about that, but it's just the instructor in me wondering.
