I hate to say it as I have a friend who is relatively happy there but when you outlaw the concept of unions and collective bargaining.....making such a statement rings pretty hollow. The rest of the bullet points in the OP's thread I have no quarrel with. If you want the above quote to ring true, you'll have to adopt some of the QOL stuff that the unions in the USA have forced to become commonplace.

Even though they are not publishing minimum hour requirements anymore, just know that Emirates has (and always had) internal non-published hour requirements. You can apply and see what happens.

Back in 2011, I was invited to the one-day assessment in ATL which would have used Delta's 777 sim for evaluation and the psychometric screening. They rescinded the offer once I filled out the form they sent which showed all my jet time was on the CRJ-200 which was below 30 tons, and no time in a CRJ-7/900 which would be above 30 tons. They wanted jet time above 30 tons.

That's not the case anymore, I've heard of them taking ERJ guys (2 guys I know). Also flydubai has lowered there mins to:

Non Type Rated Pilots must meet the below requirements

• At least 2,500 hours total flying time
• At least 1,000 hours on modern (EFIS), multi-crew, multi-engine aircraft over 10 tonnes operating weight (preference will be given to those with PIC time)

I applied to flyDubai back in that same time frame and I was turned down relatively quickly after applying online. At the time they required 2,500TT. Through the grapevine, I heard that since I had almost 4,000 hrs they were afraid I'd use them and bail to Emirates instantly. Back then the min hours required at Emirates was 4,000. It happened to another FO I knew in that same time frame as well, same boat.

I doubt they would turn you away now. With all those orders for new -800s and the MAX, they are well behind for staffing.
