As to SIM vs plane, my last assignment in the Air Force was doing acceptance/check flights after the C-5 got new engines at Lockheed. Really fun gig...got to do cool stuff. One of the more interesting things was stick shaker/stall warning checks which involved well....stalling the plane. Not one airplane stalled like the others and rarely like the SIM did. BUT...the SIM did a good enough job to keep us from killing ourselves trying not to unintentionally crash the real thing.
