Do FO's get to fly?

Speaking of 121 checkrides, What do they test you on for your SIC FO 121 checkride?

normal/abnormal engine starts
normal/xwind takeoff
area departure/arrival
approach to stalls clean/takeoff/landing
2 engine ILS
2 engine non-precision (could be 2 approaches, at least one hand flown)
V1 cut
1 engine ILS
normal/xwind landing
missed approach
balked landing
holding

probably forgetting stuff, but you'll see at least that. Everything will be to ATP standards, even if you only hold a commercial certificate.

how long do they typically last?

Depends on the examiner and your ability to run all the emergency checklists/flows, but generally 1.5-2 hours in the sim and a 1-4 hour oral.

It's not legal to log that time... A. autoflight is engaged so that person isn't sole manipulator, and b. that person isn't the one signing for that flight, so they aren't "commander of record." So.... all that flight time they are logging as PIC is actually SIC.
