I was looking at the gouges and kept reading about plates. What are they? Forgive me I havent gotten to that yet in my ground school class.

If you're slow, then there's a huge difference. Conceptually, they're not that far apart. They give the EXACT same information. Some of the abbreviations and symbology are different, and you should probably study the Jepp stuff before trying to use it in flight.
