CFI Limitations

Looking over 61.195, which says that in order to instruct in a multi, helicopter, or powered-lift, that instructor must have at least 5hrs PIC make/model. For some reason I thought that also included single-engine, or am I making that part up?

Your making that part up. Sport pilot instruction requires 5 hours in type though.

§ 61.195 Flight instructor limitations and qualifications.

A person who holds a flight instructor certificate is subject to the following limitations:

(b) Aircraft Ratings. A flight instructor may not conduct flight training in any aircraft for which the flight instructor does not hold:

(1) A pilot certificate and flight instructor certificate with the applicable category and class rating;

But there is no 5 hour rule for SE.
