CFI addon checkride

I'm an MEI instructor working on my CFI add on. When it comes to the PTS and it comes to stalls 1500 AGL is the minimum for recovery for stalls (single engine) for checkride purposes what are your personal minimumes for a checkride such as this when it comes to ceiling heights. The reason I'm asking is because I'm flying in southern MN and during the winter weather is brutal sometimes and I've had to cancel my checkride 4 times now for to ceilings most menauvers on this checkride can be done at 1500 agl but I guess I'm just curious about others personal minimums?
 
2500' for the ceiling. Power on stall starting at 1500' tops out no higher than 2000' (legal) and power off stall starting at 2000' recovers well above 1500' (legal). That's my working min for myself and for Flight Reviews...not PPL studs. I don't know how prudent it would be for a check ride either. If you launch on a 2500' ceiling at the field and you can't find clear air away from the field, you've wasted your examiner fee.
