airline pilots bidding for larger aircraft

How exactly does bidding for an aircraft work?
Say i was flying FO on QF737's
would i then wait till i get senior as a 737 FO and then try to get an FO position on A330? DO they let pilots know when positions are coming up, or do you just bid and hope for the best?
I remember Doug saying he was Bidding for a position on the 757/767, however wasnt sure how he went about it.
