Accused of "Stealing" Another CFI's Student

If this is your friend and fellow CFI at the same airport, then you did do wrong not calling the original CFI. You didn't "steal" him in the traditional sense, but you didn't follow through on a customary professional courtesy of notifying the CFI.

Whenever a student talks to me about changing over to me, I tell them that it is perfectly fine and all they have to do is:
1. Talk to their instructor
2. Tell me who it is so I can talk to them.

I disagree. If I decide to change barbers, my new barber won't make me to go tell my old barber that I want a change before I get a haircut...unless I'm on a Seinfeld episode.

I disagree.
What if the barbers had their chairs next to each other in the same shop? Would that change your mind as a consumer. Would you rather have him see you in the other chair?
Now if your barber is down the street and your next instructor is the airport over, fine, just go on.
