Well if you go to a regional your hands will be on the controls as often as they are now. You can try traffic watch (that even still around?), aerial photography, or jump pilot.

You have no idea how many people I have surprised in real life that post here on JC.

It doesn't take much to find out an identity. Especially when a guy gets a resume that happens to be at or a little above 575TT, 85ME, 60 night, 70 high performance. The more you say, the easier it is to find out who you are.
Whatever you do, don't assume a company doesn't browse these forums. I know as a fact that my company does. I have seen one person in management post here before and our recruiter has told me.
To be fair to Jhugs, if the guy is getting bored that fast I don't see him liking many other careers as a pilot other than maybe aerobatics. Most aviation jobs consist of just going between A and B with little to no interaction with the flight controls. That sounds fine till you realize you are always going to the same places over and over again. With flight instruction you at least need to be on your toes as you never know what the guy in the left seat may do.
