I never understood why there's no lamb in Shepherd's Pie.

Perhaps it relates to why (for the longest time) there was no duck on the menu at the Peabody Hotel in Memphis. (and no, it wasn't a shipping failure from FedEx).

My recipes had beef as the meat in Shepherd's Pie, and I assumed it was because the lamb was for sale, not reserved for home croft cooking, and if it wasn't good enough for sale, it was stringy mutton and not good enough for home cookin'.

I'm twisting my recipe, and eating Humble Pie.
