Clean aircraft concept?

My understanding is the 300 frosts up the top of the wing pretty good up at alt. so they're deicing it before the next departure.

It's not preventative, it is to clean off stuff that happened due to the cold fuel cells and warm moist air down low and on the ground.

Is it only on that series of airbus or all?

It's not just AI, other jets can have it happen too. Not sure if AI are more prone or not, but if I were to guess, I would say that they are not particularly more so. The MD-11's much higher speeds might offset the issue a bit.
