Grumman Albatross up and down the best beaches of the world....my job would be to find the best beach parties and and relocate the best party girls to other parties where they are needed most.

Martin 404, passenger. Two minute turns as God intended regional flying to be (shut down one engine, drop aft airstairs, passengers smash own bags, etc.). Left seat. With the air conditioning and pressurization working, new (or at least well overhauled) engines and a modern instrument panel. Pacific Northwest.

In order to be more reasonable, Dash 8 or Brasilia, passengers, everything else remains unchanged, Pacific Northwest.

Since this is purely hypothetical I'm gonna factor time travel into the equation. ;)

- Lockheed A-12 for the CIA in the early 60s - the only truly "single pilot" Blackbird.
- Lockheed NF-104 Starfighter - (See the end of "The Right Stuff.") Test pilot at Muroc Army Airfield / Edwards AFB late 40s to early 70s.
- Test pilot in R-4808N, flying things we won't hear about for another 20+ years.
- Pilatus PC-6 / Bell UH-1 Huey for Air America during the Vietnam War (I know more CIA) - Landing on up-hill jungle "clearings."
- Drug interdiction ops in an MD500.
- San Diego Police Department AS350 "ABLE." Law enforcement rotorcraft ops in general.
- Any EMS helicopter job (preferably in a BO-105).
- California Department of Forestry Tanker (Grumman S-2T), Air Attack (Rockwell OV-10 Bronco) or Copter (Huey) pilot, or any aerial firefighting gig. CL-215 would be especially cool too.
- Grumman Goose/Mallard/Albatross, or a Beaver on floats somewhere in the Caribbean.

** Buy and restore a couple Concordes, and start a transpacific supersonic airline serving LAX/SFO to Tokyo/Beijing/Hong Kong via a fuel stop in Anchorage and/or Honolulu. Eventual LAX-> PHNL -> YSSY service. Could start off Part 135 so I don't hemorrhage as much money on empty seats. :D

DC-8 Captain for ferrying hapless idiots out of the USA to the Canadian wilderness. Then returning back to the good old US of A loaded down with Revelstoke Whisky and Kokanee (no empty legs!) This solves three problems all at once...less idiots that I have to deal with, access to some of my favorite booze after my two year contract is up, and I'm feeding the polar bears. It feels good to be a humanitarian. Over the course of two years, I should be able to put a sizeable dent in the population of California and Florida, at least.

Oh, Alec... It's going to take a lot of trips and that's just the greater LA area. We might need an extra crew and airplane if we even get to Sacramento.

There's no flying on days that there's not enough wind or too windy. Once you get it in the air, you could also do it from a lawn chair while sipping a cold one. :)
