I'm looking to do some volunteering this summer in aviation, I might be able to get a couple months off from my military commitments to travel abroad. It probably won't be long to take a job anywhere but I'm willing to roll up my sleeves and do some good in the world and get some flight time on a side in a new place. Mind you I'm pretty sure both these companys would qualify as a charity under Part 91 so you just need a PPL to fly for them.
Swisspilot posted this company in Guyana. Pretty good bush flying.

Mission Aviation Fellowship this is a Christian group so you need to have the sponsorship of your church to get involved. But if your cool with that and looking to have some great experiences these guys go virtually everywhere and they're website says they have 53 aircraft!

Los Medicos Voladores "flying doctors" in english looks like they serve MX and Central America. EDIT: I think they require you to have your own aircraft.

Airserv International
Not completely volunteer, the pilots here are paid so they expect you to hang around for awhile. Most of there work is in Africa but the company is based in Virginia.

I'm also guessing all these places would require quite a bit of work besides flying since the primary mission is not to get you flight time, but to get the other non-pilot volunteers and equipment where they need to go. Either way it would be a great experience.
This is what I found off the top of my head and in about 20 minutes of searching... anything else you guys want to add?
