Can a CFI, without a seaplane rating, give instruction in an amphibian if instruction is only given on land-based takeoffs and landings?

Furthermore, can the student log seaplane time in the amphibian if the CFI isn't seaplane rated, or should it be logged as land time?

Nope, you must be rated in catagory and class of the aircraft you are instructing in.

SEL is a different class than SES.

Interestingly enough, if a CFI who recived his ticket in ASEL, gets his comercial ASES then he is automaticly leagel to instruct in a floatplane.
