Great Aviation Books

Most of these are military aviation reads, but I've enjoyed all of them:

At the Edge of Space - Milt Thompson's memoirs of his vast flight test career, centered around his experience in the X-15 program
Bogeys and Bandits - In depth description of US Navy F/A-18 (A-D model) Hornet Fleet Replacement Training
Boyd - Mentioned above...the original fighter mafia don. Lot's of discussion of EM theory and such
A Lonely Sky - Description of the D-558 test program among other oddball test programs of that era
Stick and Rudder - Classic, should be required reading for the PPL cert
Paddles - Memoirs of old school WWII carrier LSO and the training that went along with it
Black Aces High - Follows VF-41 Black Aces through their deployment to Kosovo in the late 90's, and their groundbreaking work employing the Tomcat in the air to ground mission
Fate is the Hunter - Classic Gandt prose on flying
Air Warriors - Chronicles USN pilot training, following a group of students through primary, and then picking up with another group of students in jet intermediate/advanced. Finally ends with a third set of studs in the Hornet FRS. Doesn't really cover other pipelines (helos, P-3's) in depth, but it was surprisingly accurate compared to my identical experience some 15+ years later (albeit with a little more dramatization for enjoyment purposes). Every Man a Tiger - Gen. Chuck Horner's experiences in Vietnam flying the F-105, and beyond into his later years as a senior officer in command of the air war in the 1991 Gulf War.

North Star Over My Shoulder is one of my favorite reads, a great look at the golden age for airline pilots.
