Seems like most jobs out there are for A&P's, just wondering if there's much work for a guys like me in the civilian world (4 years working as an electrician on F-14's and F/A-18's) and about 8 months of education on electronics and electrical systems. Know where to look?

Yes, but many will require an A&P license. I would highly advise you to try to obtain it, especially if your experience will count towards either rating. My company for example now requires all avionics guys to have their A&P, and from my recent job hunting, it is becoming standard in the airline industry(though you may find some who don't).
 
It is possible to get hired with somebody. Especially contract companies. I worked with several ex-Navy guys at the big "D" in avionics. They did not have their A&P, but I think they at least had their FCC. I would suggest getting that. Hope this helps.
