I was thinking of attending Cornerstone for my CFI II and MEI and then trying to stay with them as an instructor. Does anyone know if they need instructors or have any other input about their operation?

And I would not count on staying with the training facility later on, at least not to select it by that criteria alone. It is very easy to tell you with a smily face that they 'prefer hiring from within their student body' but nowadays that is more of a marketing ploy than anything serious. Best way is to go visit, never look at a website to find out if you could learn or work there. Emails & online contact forms remain 89% unanswered in my case, which settles the question of possibly working there later.

Don't burn yourself into a corner by becoming a prospective employee while you pay them money. Either they pay for your training (then they say what happens) or you do and then you must have the controls as to how professionally they treat you nd how your training experience will be.
 
While I have no personal experience with the place, I have never heard anything positive said about the owner. I know about half a dozen CFIs that did their training there and said that they WOULD NOT stay even though a job was offered to them.

Ask around.

I went by their school in Ogden last week. They made me feel very unwelcome; almost as if I was wasting their time. Entirely not the place I want to do my training nor work for.

Honestly I don't think anywhere will be a sure job just because you do your training there the way things are right now. Find the best training fit for you, and though you may come out an unemployed CFI, at least you will be more marketable than you are right now.

I usually look at flightschools for any sort of training by the following criteria:

  • Could I see myself work there?
  • Do I feel like a customer or like a walking wallet?
  • How organized is the place?
  • Do they answer questions or derail into their marketing scripts?
  • Is there "stuff" (what is stuff, anyways?) or are we using proper terminology?
  • What is their reputation?
