Amphibian Planes

I am going to get my Single and Multi engine Sea ratings in the next couple of weeks. I will be doing the multi in a G44A Grumman Widgeon. It is a flying boat with retractable gear. I it a very capable land plane as well as a seaplane. How would you log the time in this plane, AMES or AMEL. I was thinking it would be whatever you were landing on, but what if you were doing both during the same flight. How do you log this time? Could you fly this plane without a seaplane rating if you only operated from land?
 
Just thought I would add that I know that amphibian planes can be logged as both land and sea planes because there are several schools that will train you for commercial or ATP Land and sea simultaneously and you can get both ratings by doing only one checkride in the amphibian.
 
Where are you getting your multi-seaplane at? In Jonesboro? I'm about to move back to Fayetteville, and would love to get that add-on.
 
No, I am going to a place near Orlando, FL. There aren't many bodies water available to land a plane on around home. I would like to move to FL and fly some tours or something after getting the ratings.
 
I just log it as multi time or single time. The only difference in how I'd log is noting water takeoffs/landings vs land takeoffs/landings, or any combo therein, in the remarks section.

I'm moving back to Memphis in Aug. You can have my apt in Orlando.
